Chicken Alfredo Pasta Recipe
Move over, carbonara! If you love any pasta dish that’s tossed in a cheesy, creamy sauce with chunks of chicken, then this is the dish you should be making. It’s fast, easy, and definitely a pasta dish you’ll want to make over and over again.
What is Chicken Alfredo Pasta
At its base, an alfredo sauce is a white sauce that is similar to carbonara (not the Pinoy carbonara or the one that’s made with cream). It is a classic pasta sauce, a creamy emulsion made with just three main ingredients: butter, Parmesan cheese, and pasta water. The starchy water is what makes the sauce stable into a creamy consistency that can coat each noodle you toss in it.
A chicken alfredo pasta, therefore, is a simple hack to the classic pasta sauce that includes chicken.
How To Serve Chicken Alfredo Pasta
This pasta is excellent on its own but you can of course serve it with buttery, garlicky bread. It really needs no other accompaniment when it’s so hearty on its own.

This pasta starts off with cooking the pasta. You can of course always elevate your pasta dish by making pasta from scratch. (Pssst! It’s easier than you think.) Cook it according to your desired doneness or follow the package directions. Set this aside along with some pasta water.
The sauce is just as easy as another other pasta sauce. Cook the chicken first so you can develop the delicious fond that makes your pasta sauce over-the-top more delicious. Add garlic, cream, and chicken stock made from a cube or granules. This thickened sauce is tossed with the pasta and voila! A creamy chicken pasta that you’ll want to make over and over again because it’s just so good. Plus, it’s easy to make to boot!
Tips To Make Delicious Chicken Alfredo Pasta
1 Add more garlic.
Chicken may be the start but we think garlic makes dishes super delicious. Toasted garlic makes this even more amazing so remember to toast these along with the chicken. You can even just toss in some toasted garlic at the end and top it off with more!
2 Seriously. Make fresh pasta.
Fresh pasta is a skill that you will cherish once you taste how good it is! It does not need to be as complicated as some may make it out. Flour, eggs, salt, and little oil is all you need. Kneading the dough can be done by your stand mixer and even rolling and cutting the pasta, too, if you have the attachments.
How To Store Chicken Alfredo Pasta
Any pasta dish is best stored separately from the sauce. This is because the pasta can go bad faster than the sauce will, especially if it’s a tomato sauce. A cream sauce will also spoil faster than hardier tomato sauces. Because of this, you’ll want to store the pasta in a container fully dry. Water will make your pasta spoil faster.
The sauce should also be stored in the refrigerator and consumed within 3 days for best results.

Boil and Saute
Chicken Alfredo Pasta Ingredients
400 grams fettuccine
1 tablespoon butter
2 tablespoons oil
2 pieces chicken breast fillets, cubed
5 large cloves garlic, peeled, finely chopped
1/2 cube chicken bouillon, or granules
1 tablespoon all-purpose flour
1/2 cup water
1 cup all-purpose cream
1/2 cup parmesan cheese, grated
1/4 cup parsley, finely chopped
salt, to taste
ground black pepper, to taste
How to Cook
Bring a pot of salted water to the boil. Cook pasta according to package directions. Reserve about 1/2 cup pasta cooking water, drain pasta, and keep warm.
Meanwhile, in a sauté pan over medium heat, melt butter and heat oil. Add garlic and bouillon cube, and stir until cube has dissolved. Add chicken and cook, stirring, until cooked through.
Sprinkle in flour then stir until flour is mixed in thoroughly. Pour in water or pasta water. Stir until the flour is dissolved and simmer until thickened. Stir in Parmesan, pour in cream, and stir until mixed. Season to taste with salt and ground pepper. Bring to a simmer then turn off the heat.
Add then toss pasta and parsley into the sauce, adding pasta water as needed if the mixture becomes dry. Divide among 4 plates and grate more cheese on top of each. Serve immediately.
